Thai Basil Lettuce Wraps (Paleo, Gluten Free)



Who doesn't love a little spice now and then? When you're looking for something a little fun to make for a crowd as an appetizer, or as a main dish on the weekend, it's so tempting to go for the old stand-by's, but you'll love to shake it up with these Thai Lettuce Wraps. This is a fantastic meal or snack all year round. The high protein content of the beef will keep you satiated, and the flavors of the "slaw" all come together beautifully to create a beautiful, flavorful dish that everyone will enjoy. Thai Basil Lettuce Wraps (Paleo + Gluten Free) Serves 4

This is a great low-carb meal, or serve them with steamed rice on the side (this is what I do)


2 lbs. grass-fed ground beef - 90% lean, or skirt steak 90% lean (sub bison, venison, turkey)

1.5 tbsp. of sesame or olive oil

4 scallions, thinly sliced

1 red chile, thinly sliced

2 cups fresh basil leaves

3 medium (or 6 small) carrots, peeled sliced thin (optional, skip to save time)

Juice of 2 limes

4 cloves garlic, chopped

1-inch piece of ginger, grated

1/3 cup cashews, chopped

2 tbsp. tamari

Butter Lettuce Leaves for serving

Directions:

1. Chop the scallions, garlic, basil, ginger, and thinly slice the red chile (but keep them separate).

2. Slice the carrots.

3. Squeeze the limes into a small bowl, chop the cashews and set aside

4. Make the slaw: combine the scallions, half of the red chile, half of the basil, all of the carrots, the lime juice, and the oil in a bowl. Toss until well coated and refrigerate until ready to serve.

To cook and assemble:

1. Heat a pan over medium heat and the remaining oil to the pan. Once hot, add garlic and ginger into pan and let it crisp for about 30 seconds. Add the beef, along with a sprinkle of salt and pepper.

2. Continue to break up and stir the meat until the beef is mostly cooked through.

Add the cashews and rest of the basil leaves and the tamari, cook to combine for 1 minute.

3. Remove from heat, place in a serving dish and serve with the carrot mixture and crisp lettuce cups.
