Watermelon Feta Salad




Summertime makes me crave all the salads, especially anything with fruit. This is definitely a time when I am making my best summer salad on repeat, but for a fun twist, I love to incorporate this watermelon "salad". It's perfect for a dinner party or entertaining because you can make it ahead of time, it adds beautiful colors to the spread, and everybody loves it. We love watermelon for all of it's hydrating properties, but it's also a great source of Vitamin C, carotenoids, and lycopene. Plus, eating fresh fruits and veggies boasts plenty of fiber, which is almost like another macronutrient, it plays a big part in our overall health by lowering cholesterol levels, helping to maintain steady blood sugar, and generally increasing lifespan. Make sure to eat the rainbow!

Watermelon Feta Salad Serves 4

Ingredients:


½ of a large watermelon, seeds removed, cut into 1-inch chunks

1/4 cup fresh mint leaves, chopped

1 shallot, peeled and sliced thinly

1/4 cup crumbled feta (buy it in brine and crumble it yourself for maximum flavor)

1/4 cup olive oil

Juice from one lime

Sea salt + fresh cracked pepper to taste

Optional: sliced cucumber for more crunch


Directions:


1. Make the dressing: combine the olive oil, lime juice, salt and pepper. Whisk well, set aside.


2. Take your watermelon chunks (you can buy pre-chopped), and place them in a large bowl.


3. Add your shallots and mint, then your dressing, and mix to combine. You can do this a few hours ahead of serving.


4. When you are ready to eat, top with the feta and enjoy!
